After a lovely weekend of celebrations with family and friends I was up early Monday morning to tackle a long list of ‘to dos’ with gusto. Durning these short breaks in our travels we are busy with the mundane tasks that have to be done to keep everything in order at home and to ensure we are ship shape to get on the road again. Now if only the weather would co-operate.
This past weekend we had proper Spring weather for the first time this year with sunshine and even a bit of warmth, enough to discard the heavier jackets, scarfs, gloves and body warmers and bike in just a sweatshirt and long pants, the shorts will have to wait a while longer. Over the weekend I had a friend ask rhetorically ‘when is February going to end’ and I am beginning to wonder the same thing myself.
Springtime in the forest this weekend
After straightening up the chaos that was the apartment I ventured to do some outdoor jobs. The day was supposed to be dry and the plan was to clean our bikes and empty, clean and reorganise Tigín’s garage space. I pulled out all the supplies along with the bikes, after a lot of recent use in muddy conditions, they were in bad shape. I had just soaped everything up when then the rain began. The bikes and I retreated to the relative dry of a roof overhang until the shower passed and I managed to finish the job. Unfortunately Tigín’s garage makeover will have to wait for another day.
The up side for hubby is because I have been forced indoors prematurely he has banana bread for his coffee break. It is true what they say about every cloud having a silver lining.
If you would like the recipe, click on the following link, it is based on the Avoca Cookbook recipe and I use a ‘chia egg’ to make it vegan, it is tried and tested and a real crowd pleaser in our house.
